Evaluation of dietary patterns and behavior of Ethiopian women in Kiryat Moshe, Rehovot, and an intervention to promote healthy eating habits
 

Abstract

 
Immigrants from Ethiopia living in Israel are in the process of adjusting to a Western lifestyle. Studies indicate that this population is at high risk for developing chronic diseases.
 

Objectives:


This proposal is designed to  (1) Characterize dietary patterns, determine nutritional status, identify deficiencies and assess knowledge and attitudes concerning nutrition among Ethiopian women; (2)  Plan, execute and evaluate a nutrition education intervention based on survey results using behavioral models like the Transtheoretical Model of Change.

Working Hypothesis:


We propose that the Ethiopian population has adopted dietary patterns different from those in their native country that negatively affect their health and leads to increased incidence of obesity and diabetes.  Low socio-economic status and lack of knowledge regarding the importance of a balanced diet lead to nutrient deficiencies.  We hypothesize that a nutrition education intervention program will lead to a healthier lifestyle, influence eating patterns and impact both participants and their families.  Furthermore, the program will increase knowledge and affect attitudes relating to nutrition and health and will provide tools for making informed dietary choices.

Methodology:


Cross Sectional Survey
: Fifty women ages 20-45 will be recruited for the study. Data will be collected on economic, social and health status along with information on demographics and lifestyle. Participants will be interviewed using a Dietary Assessment Questionnaire (24 hour recall). The validated questionnaire is based on The First National Health and Nutrition Survey carried out by the Ministry of Health and will include traditional Ethiopian foods. Anthropometric measurements will also be carried out. Community nutrition intervention and assessment. This will include planning, executing and assessment of a program aimed at improving nutritional status and providing tools and knowledge for consuming a balanced diet .  

Significance:

Accurate, up-to-date information on the attitudes and dietary behaviors of Ethiopian immigrants living in Israel is deficient.   Scientific methodology will be used to carry out nutritional assessments.   Data collected will serve as the basis for carrying out an intervention founded on known behavioral models.  Conclusions from this research will help to establish health care policy for both Maccabi Health Services and other organizations that deal with preventive medicine in Israel.  The project will work towards improving women’s health while incorporating traditional lifestyle factors.  It will also empower participants and allow them to act as agents for change within their families.
